It's no secret that Christmas cookies are among the most popular holiday treats to make. If you're looking for some other Christmas desserts to add to your sweet spread this year, try one of these Rawleigh-inspired recipes made with our unique, delicious, and simple pie mixes.

The moist chocolate cake base is filled with creamy chocolate ganache and topped with rich chocolate buttercream and chocolate pearls in these triple chocolate fudge cupcakes! These chocolate cupcakes are every chocolate lover's dream and Rawleigh helps this dream come true.

To prepare the filling for the cupcake: 

Whisk together 7 tbsp (100 ml) of mix with 2/3 cup (150 ml) of sugar, 1/2 cup (120 mL) of milk, and 1 egg yolk beaten (optional) until smooth. 

Add 1-1/2 cups (375 ml) of milk. Cook over medium heat, stirring constantly, until thick. Pour filling into a 9-inch pie crust or in individual serving cups and refrigerate. 

The whole container prepares approximately 6x9 pies or 32 x 1/2 cups (125 mL) of pudding.

To make chocolate cupcakes:

Preheat the oven to 350 degrees Fahrenheit.

Whisk together the flour, sugar, cocoa powder, espresso powder, baking powder, and salt in a small mixing bowl. Place aside.

In a separate large mixing bowl, combine the vegetable oil, eggs, milk, and vanilla extract.

Mix in the dry ingredients gently until just combined. The batter will be extremely thin.

Fill each cupcake liner with about 14 cups of batter (they should be about halfway full).

Bake for 18-22 minutes, or until a cake tester comes out clean, at 350°F.

Remove from the pan and cool on a wire rack.

Allow the chocolate cupcakes to cool completely before filling and icing them.

Remove the center of each cupcake with a cupcake corer, then fill with 1-2 teaspoons of thickened chocolate filling.

Frost the filled chocolate fudge cupcakes and garnish with crunchy chocolate pearls!
