We have seen, Rawleigh nutmeg, ground nutmeg, nutmeg spices, fresh nutmeg, nutmeg cheese, now we will have alook on Rawleigh nutmeg cake.
nutmeg cake recipe is as follow:
Ingrediant:
2 c lightly packed brown sugar, 1 egg, 1 c milk, 1/2 c unsalted butter, 2 tsps ground cinnamon or cassia, 1 tsp ground allspice, 1 tsp coriander powder, 2 c self-rising flour, 2 tsps ground nutmeg.
Direction:
Preheat oven to 350 & butter sides of an 8-inch round cake pan, Line the base with greased parchment paper, Step #3 Set aside, Mix together flour, & coriander, brown sugar, allspice, cinnamon, then rub the butter into the mixture until it resembles coarse bread crumbs, Spoon half of this mixture over the base of the prepared pan, Whisk the egg & nutmeg into the milk, then add to the remaining flour mixture to make a very runny batter, Stir thoroughly, Pour the batter over the crumbs in the pan, Bake for 70 mins, or until golden brown & springy to touch in the center, Cool in the tin for a few mins, then turn out & cool thoroughly on a wire rack,
Note: If you can't find self-rising flour, substitute an equal amount of all-purpose flour & add 1 tbsp baking powder & 1 tsp salt.

Nutmeg raisin coffee cake:
Ingrediant:
3 1/2 c. all-purpose flour, 2 c. sugar, 1 1/2 c. milk, 1 c. butter (softened), 1 tbsp. baking powder, 1 tbsp. nutmeg, 2 tsp. vanilla, 3 eggs, 1 c. raisins, 1/2 c. chopped nuts, optional.
Direction:
Preheat oven to 350 degrees. Grease a 10 inch tube pan. Into a large bowl measure all ingredients except raisins (and nuts if using). Mix all ingredients at low speed until just mixed, increase speed and beat 3 minutes, occasionally scrape sides of bowl.
Pour into pan. Sprinkle raisins (and nuts) evenly over top and stir carefully into batter. Bake 1 hour and 15 minutes or until toothpick inserted into center comes out clean. Cool cake in pan on wire rack 10 minutes. Remove from pan. Serve cake warm or cool completely.
